Winter Melon Shiitake Mushroom Soup

Materials:

Winter melon cut 1.5kg
8 Dried Shiitake mushrooms (25g)
Water 900ml to soak shiitake mushrooms, 1 Litre in soup pot

Ingredients:

1 tsp cooking oil
2½ tsp salt

Tips:

1. Use dried shiitake mushrooms.

2. Best to soak shiitake mushrooms overnight. Minimum 2 hours beforehand. Maximum 24 hours.

3. Dice both winter melon and shiitake mushrooms.

4. Use mushroom water in the soup as well.

5. Wait until water is boiling to add winter melon.

6. Use pan or wok to treat mushrooms before adding them into the soup.

7. Keep the soup boiling at any time.

Procedure:

1. Soak shiitake mushrooms with 900ml cold water. Best overnight.
2. Take out winter melon seeds and wash the melon.
3. Cut winter melon’s skin off and dice the melon.
4. Squeeze soaked shiitake mushrooms.
5. Cut mushrooms’ stalk off. Dice mushrooms.
6. Fill a pot with 1 litre of water.
7. Add mushroom water on top of the 1 litre water. Do not add impurities at the bottom of the mushroom water.
8. Start to heat the pot and bring the water to boil.
9. Add diced winter melon into the pot once the water is boiled.
10. Heat a pan or a wok.
11. Add oil.
12. Add diced shiitake mushrooms into the pan.
13. Stir mushrooms in the pan until mushrooms are golden brown and can smell mushrooms.
14. Add pan cooked mushrooms into the soup pot.
15. Bring the soup to boil again.
16. Reduce heat but keep the soup boiling.
17. Cook for another 1.5 hours.
18. Add salt in 1 hour.
19. Cook another half hour after adding salt.
20. Off heat.
21. Enjoy.
