Shiitake Mushroom Fried Ball Noodle Soup
10 flowers Shiitake Mushrooms
1 pack Fried ball 油面筋 (50g)
300g Noodles (Fresh noodles or Dried noodles)
½ tbsp Light Soy sauce (生抽)
1 tsp Vegetarian Stir-fry sauce(素食蚝油)
½ tsp salt for noodles
½ tsp oil
Water 1 Litre to soak shiitake mushrooms, 2 Litre to cook noodles
Sesame oil drips (optional)
1. Soak shiitake mushroom with cold water and early enough to get the best taste feeling.
2. Cut Fried ball into half to let them absorb shiitake smell.
3. Keep the mushroom soaking water for noodle soup.
4. Do not add impurity at the bottom of the mushroom soaking water.
5. For mushroom to taste well, add soy sauce and vegetarian stir fry sauce with shiitake mushrooms first.
6. Let shiitake mushrooms and fried balls cook together in the mushroom water for some time.
7. To serve, add noodle soup from the wok on top of noodles.
8. For better taste experience, enjoy the Shiitake Mushroom Fried Ball Noodle Soup right after you cook them.
1. Soak Shiitake mushrooms with 1 litre of cold water beforehand. Minimum 2 hours. Maximum 24 hours before.
2. Wash fried balls. Just rinse.
3. Squeeze water out from soaked shiitake mushrooms. Cut them into smaller pieces. Keep soaking mushroom water for noodle soup.
4. Cut fried ball into half.
5. Heat a wok.
6. Heat separate pot with 2 litres of water to cook noodles.
7. Add ½ tsp of salt into the noodle pot.
8. Add ½ tsp of oil into the wok.
9. Add shiitake mushrooms into the wok once oil is hot.
10. Stir mushrooms, add ½ tbsp of light soy sauce. (wok)
11. Add 1 tsp vegetarian stir fry sauce. (wok)
12. Stir well. Add mushroom water. Do not add the impurity at the bottom of water. (wok)
13. Add fried balls. (wok)
14. Cover the wok with lid.
15. When the water in the noodle pot is boiled, add noodles.
16. When noodles are boiling, reduce heat to medium high, keep the noodles boiling.
17. For fresh noodles, keep boiling for 4 minutes. For dry noodles, keep boiling for 10 minutes.
18. When the soup in the wok is boiled, reduce heat to medium and keep the soup boiling.
19. Stir the wok contents once during the boiling.
20. After noodles are cooked. Turn off heat for both wok and pot. Turn off the heat for noodle pot. Turn off the heat for wok.
21. Take noodles out to the bowl.
22. Then add noodle soup from the wok on top of the noodles.
23. Optional to drip some Sesame oil on top.
24. Enjoy.
