Broccoli Carrot Cauliflower Shiitake Mushroom Noodle Soup
One pack of frozen Steam Fresh Broccoli, Carrot and Cauliflower (300g 3 steam bags)
6 dried shiitake mushrooms
200g to 400g Noodles to suit (Fresh noodles or Dried noodles)
Salt 1 tsp for soup, ½ tsp for Noodle
Light soy sauce 1 tsp
Water 500ml to soak shiitake mushrooms, 500ml for soup, 2 litres of Water to cook noodles
Sesame oil 1-2 drops (optional to use)
1. Soak dried shiitake mushrooms beforehand. At least 2 hours beforehand.
2. Cold water soaking may bring out the shiitake mushroom smell later in the soup.
3. Hot water soaking brings out the shiitake mushroom smell as early as before cooking.
4. Chop off stalk of shiitake mushrooms if there is any.
5. Cut shiitake mushrooms into half.
6. Need to cook shiitake mushroom soup for 20 minutes to bring out the best soup taste.
7. Use frozen vegetables may save time to clean and cut.
8. Use fresh vegetables may get the best taste performance.
9. Add salt to noodle pot will make the noodles tasty and blend with soups and veggies.
10. Cook steps A and B in around the same time, and aiming to finish both cooking at the same time as well. This will make this noodle soup quick and yummy.
1. Use cold water to soak the shiitake mushrooms at least 2 hours beforehand.
2. Squeeze water from soaked shiitake mushrooms.
3. Cut the mushrooms into half. Chop off stalk if there is any.
4. Following cooking steps A and B may be cooked at the same time.
A: Cook the shiitake mushroom soup.
1. Add shiitake mushroom into a pot. (soup pot)
2. Add mushroom soaking water. Not to add impurity at the end of the soaking water.
3. Add extra 500ml of water into the pot.
4. Heat the pot. Bring it to boil.
5. Once it is boiling, reduce heat to medium.
6. Add 1 tea spoon of salt into the pot.
7. Add in 1 tea spoon of light soy sauce as well.
8. Cook for 20 minutes. Keep the pot boiling.
9. In 20 minutes, bring up the heat.
10. Add broccoli, carrot, cauliflower from the pack into the pot.
11. Wait for the soup to boil again.
12. After the soup is boiling again, reduce heat to medium.
13. Keep cooking for 1 minutes. If you are using fresh vegetables, keep cooking for 2 minutes.
14. In 1 minute, turn off the heat.
15. Shiitake mushroom soup is cooked.
B. Cook noodles.
1. Add 2 litres of water into another pot. (noodle pot)
2. Heat the noodle pot and bring it to boil.
3. Add ½ tsp of salt into the noodle pot.
4. Once the noodle pot is boiling, add noodles.
5. Stir noodles.
6. When the pot is boiling again, keep the lid open.
7. Keep boiling for 4 minutes if it is fresh noodles. For dried noodles, keep boiling for 10 minutes.
8. In 4 minutes (fresh noodles) or 10 minutes (dried noodles). Turn off the heat for noodle pot.
C. Serve
1. Transfer the noodles into a big bowl.
2. Scoop broccoli, carrot, cauliflower and the soup from Procedure A on top of the noodles.
3. Simple and easy. Except soaking mushroom beforehand, all steps may be completed in less than half an hour.
4. Enjoy.
