Endive Carrot Vegan Meat Hot Noodle Salad

Materials: Serves 2-3

1 Endive
1 Carrot (100g)
5 Soy nuggets
Several leaves of Cos lettuce
Noodles 500g or suit, fresh noodles or dried noodles

Ingredients:

Oil ½ tsp
Salt ¼ tsp for endive, ½ tsp for noodles
Sugar ¼ tsp, Brown sugar or white sugar
Water 2-3 litres to cook noodles

Tips:

1. Cut endive’s end off. Take off its old leaves.

2. If endive leaves are too long, break them into half.

3. Slice both carrot and vegan meat.

4. Keep on stir all vegetables and ingredients.

5. When endive leaves become green, they are cooked.

9. Add salt to noodle pot will make the noodles tasty and blend with vegetables and their juice.

6. Add juice of the vegetables to the noodles as well.

Procedure:

1. Open the endive. Cut its end off. Tear off old leaves.
2. Wash the endive.
3. Wash the carrot.
4. Wash the cos lettuce.
5. Peel the skin off the carrot and slice the carrot.
6. Slice the vegan meat.
A: Wok cook vegetables.
1. Heat a wok or a large pot.
2. Add ½ tea spoon of oil.
3. When oil is hot, add carrot and vegan meat.
4. Give them a good stir.
5. Add endive.
6. Stir them well.
7. Add ¼ tea spoon of salt.
8. Add ¼ tea spoon of sugar.
9. Give them a through stir.
10. Stir until endive leaves turning green, turn off the heat.
11. Transfer the vegetables into a plate.
B. Cook noodles.
1. Add 2-3 litres of water into another pot. (noodle pot)
2. Heat the noodle pot and bring it to boil.
3. Once the noodle pot is boiling, add noodles.
4. Stir the noodles.
5. Add ½ tea spoon of salt into the noodle pot.
6. When the pot is boiling again, keep the lid open.
7. Keep it boiling for 4 minutes if it is fresh noodles. For dried noodles, keep boiling for 10 minutes.
8. In 4 minutes (fresh noodles) or 10 minutes (dried noodles). Turn off the heat for noodle pot.
C. Serve
1. Add cos lettuce to the bottom of a large bowl.
2. Transfer the noodles into the bowl.
3. Add the cooked vegetables (from Procedure A) on top of the noodles. Add in juice of the vegetables as well.
4. All steps may be completed within 45 minutes.
5. Enjoy.
