Salt Pepper Battered Soy Bean Cabbage Burger

Materials: 4 Burgers

½ cup Soy beans
1/3 cup diced cabbage
½ cup glutinous rice flour
Bread Buns
Salt Pepper Batter:
1/3 cup plain flour, 1 tsp salt, ½ tsp black pepper, 3 ½ tbsp water

Ingredients:

Salt ½ tsp
Oil ½ tsp oil for patties mix and 1 tsp to cook the patties
Sugar ¼ tsp
Black Pepper sprinkle
Water 2 ½ tbsp

Tips:

1. Soak soy beans overnight.

2. Dry cos lettuce with paper towel.

3. Cut cabbage into strips then dice them.

4. Ideal soy beans granule size to be 2-3mm long x 1mm wide.

5. Use food processor safely. Lock all components before process. Take container out and use long spoon to check the food inside the container. Pull spindle out with blades. Do not touch sharp blades with hands directly.

6. Use large bowl to make patties. Make patties with gentle force.

7. Add water gradually when making the batter.

8. Make patties into a ball first, then press down.

9. You may brush batter to the patties.

10. Cooking patties is easy when we use flat pan and curved spatula.

11. When oil is warm in the pan, turn off the heat. Do this when putting in patties may also protect you from being burned.

12. Carefully control cooktop heat to cook patties so both sides are in crispy golden brown.

13. Add salt only to meshed avocado. Cover the avocado mesh container. Do not leave the mesh container expose to the air for too long.

14. Use wavy edge knife to cut buns and tomatoes.

15. Warm buns to get best taste result.

16. For better taste feeling, use sauce and vegetables same as this recipe.

17. Not recommend to add salt and pepper in addition to the battered patties.

18. Any types of cheese seem not necessary for this recipe.

Procedure:

1. Soak soy beans overnight.
2. Wash soy beans, cabbage, cos lettuce, tomato and avocado.
3. Dry cos lettuce with paper towel.
4. Dice the cabbage into 1/3 cup.
5. Slice the tomato.
6. Grind soy beans into granules. Granule size to be around 2-3mm long x 1mm wide.
7. Mix grinded soy beans, diced cabbage, salt, sugar, black pepper, oil and glutinous rice flour together. Add half of the glutinous rice flour first. Then add the rest.
8. Add water if the dough is too dry. Around 2 ½ table spoon of water is added.
9. Mix them into dough. Then separate them into 4 equal parts.
10. Make batter with 1/3 cup of plain flour, 1 tea spoon of salt, ½ tea spoon of black pepper and 3 ½ table spoon of water. Add water gradually.
11. Heat a flat pan. Add oil. ½ tea spoon of oil for the start. Turn off the heat when oil is warm.
12. Make patties from the mixture. Then coat batter on to the patties.
13. Cook patties in the flat pan.
14. Control heat well to cook the patties and make both sides of the patties in golden brown.
15. Mesh avocado. Add salt only.
16. Spread avocado mesh on the bun. Make burgers with bread buns, cos lettuce, tomato, cooked patties and baby rockets. Use BBQ sauce or vegan mayonnaise for dressing.
17. Enjoy.
