Curry Coconut Pumpkin Cauliflower Burger

Materials: 4 Burgers

Pumpkin (300g)
1 cup diced Cauliflower
¼ cup plain flour
¾ cup glutinous rice flour
Bread Buns

Ingredients:

1 ½ tsp curry powder
3 tbsp Coconut Cream for patties, ½ tbsp Coconut Cram for bedding
1 tsp Salt
Oil ¼ tsp oil for patties mix and 1 tbsp to cook the patties
not recommend to use pepper

Tips:

1. Use curry powder that does not contain garlic or onion.

2. Take sauces and veggies out from fridge early enough for better taste feeling.

3. When steaming the pumpkin, make sure there is water in the steamer.

4. Cool down the steamed pumpkin.

5. Use large bowl to make patties. Make patties with gentle force.

6. Make patties into a ball first, then press down.

7. Cooking patties is easy when we use flat pan and curved spatula.

8. When oil is warm in the pan, turn off the heat. Do this when putting in patties may also protect you from being burned.

9. Carefully control cooktop heat to cook patties so both sides are in crispy golden brown and the patties are cooked.

10. If it is hard to form the pumpkin mixture into shapes, you may make the patties into ball. And then press down and shape them in the pan.

11. Use wavy edge knife to cut buns and tomatoes.

12. Warm buns to get the best taste result.

13. Any types of cheese seem not necessary for this recipe.

Procedure:

1. Wash the pumpkin.
2. Cut pumpkin’s skin off. Then cut the pumpkin into chunks.
3. Place pumpkin chunks into a steamer.
4. Heat the steamer. Make sure there is water in the bottom pot.
5. Once the steam comes out, reduce heat to medium. Steam for 10 minutes.
6. Wash the cauliflower.
7. Wash tomato, cucumber and cos lettuce.
8. Dry the lettuce with paper towel.
9. Take alfalfa sprouts out from the box.
10. Cut cauliflower into small pieces, then dice the cauliflower.
11. Cut the tomato and cucumber into pieces.
12. Turn off the pumpkin steamer after 10 minutes of steaming.
13. Take the pumpkins out from the steamer. Let them cool down.
14. Put the pumpkins in a big bowl.
15. Mix the pumpkin, diced cauliflower, salt, oil, curry powder, coconut cream, plain flour and half of the glutinous rice flour together.
16. Add the rest of glutinous rice flour. Mix them into dough. Then separate them into 4 equal parts.
17. Heat a flat pan. Add oil. ½ table spoon of oil for the start. When oil is warm. Turn off the heat.
18. Make patties from the mixture.
19. When all the patties are made and are in the pan, turn on the heat of the pan.
20. Cook patties in the flat pan.
21. Control heat well to cook the patties and make both sides of the patties in golden brown.
22. Spread coconut cream on the bread. Make burgers with bread buns, cucumber, tomato, lettuce, cooked patties and alfalfa sprouts. Use vegan mayonnaise for dressing.
23. Enjoy.
