Curry Coriander Green Bean Buckwheat Noodle Soup
200g Green Beans
A bundle of Coriander (8 stems 115g)
500ml Plant based stock in beef style
Buckwheat noodles 300g or suit
2 tsp Curry Powder
Salt ½ tsp for soup, ½ tsp to cook noodles
Water 200ml to cook soup, 2 litres to cook noodles
1. Please make sure the curry powder you buy does not have garlic or onion components in them.
2. Cut coriander’s end off before soak them in the water. Wash the sand off the coriander.
3. Cut green beans’ both end off.
4. To eat them easily, you may cut the coriander into 2cm length.
5. Cook both the green beans and coriander in a short time may bring us their fresh taste as well as getting them cooked.
6. Plant based stock in beef style already got salt it in, no need to put much salt in the soup.
7. Recommend to cook both the soup and noodles at the same time.
8. Add salt to noodle pot will make the noodles tasty and blend with soup and veggies.
1. Cut coriander’s end off.
2. Soak the coriander in the sink to wash the sand off.
3. Wash the green beans.
4. Cut both ends off the green beans and then cut them into half.
5. Cut coriander into smaller length. Each length around 2cm long.
A. Cook noodles.
1. Add 2 litres of water into a pot. (1st pot: noodle pot)
2. Heat the noodle pot and bring it to boil.
3. Add ½ tsp of salt into the noodle pot.
4. Once the noodle pot is boiling, add buckwheat noodles.
5. Stir the noodles.
6. Keep it boiling for 10 minutes after the pot is boiling again.
7. In 10 minutes, turn off the heat.
8. Soup may be cooked at the same time as noodles are cooking.
B: Cook the soup.
1. Heat another pot with 200ml of water. (2nd pot, soup pot.)
2. Add 500ml of plant based stock in beef style.
3. Add ½ tsp of salt.
4. When the pot is boiling, add 2 tsp of curry powder.
5. Add green beans.
6. Close the lid and wait for boil.
7. When the pot is boiling again, keep the lid open.
8. Keep the pot boiling for 1 minute.
9. In 1 minute, add coriander.
10. Stir the coriander down.
11. In half a minute, turn off the heat.
12. Soup is cooked.
C. Serve
1. Transfer buckwheat noodles into a big bowl.
2. Add green bean coriander soup on top of the noodles.
3. All steps may be finished within 30 minutes.
4. Enjoy.
