Mint Corn Broccoli Tomato Noodle Soup
Corn Cob 200g
1 Broccoli 370g
Mint 1 stem per bowl
1-2 tomatoes
Big red condensed tomato soup 420g (1 can)
Noodles 300g or suit, fresh or dried noodles
Salt ½ tsp for Noodles
Water 2 litres to cook noodles, 1 litre for soup
1. Tear mint leaves off the stems.
2. Cut corn cobs into 4-5 cm long for easy eating.
3. Cut broccoli into smaller flowers.
4. For sweat corns, 15 minutes boiling time is enough to get them cooked.
5. After boiling, cook broccoli for 2 minutes may preserve their green while still keep them fresh.
6. No need to add extra salt into the soup. Condensed tomato soup has already got salt in it.
7. Recommend to cook both the soup and noodle at same time.
8. Scoop the hot soup on top of the noodles and fresh vegetables is the key to make the noodle soup yummy.
9. Add salt to noodle pot will make the noodles tasty and blend with soup and veggies.
1. Wash the mint.
2. Wash the corn cobs.
3. Wash the broccoli.
4. Wash the tomatoes.
5. Cut the corns into smaller length. Around 4-5 cm long. This is for us to eat them easily.
6. Tear off the leaves from the mint stems. Keep mint stems and cook them in the soup.
7. Cut broccoli into small flowers. You may eat broccoli stems as well.
8. Cut tomatoes into small pieces.
9. Following cooking steps A and B may be cooked at the same time.
A: Cook the noodle soup.
1. Fill a pot with 800ml of water. (soup pot)
2. Add corn cobs into the pot.
3. Heat the pot and bring it to boil.
4. Once the pot is boiling, reduce heat.
5. Cook for 15 minutes. Keep it boiling.
6. In 15 minutes. Take the corns out from the pot.
7. Add broccoli into the same pot. Bring up the heat.
8. Once it is boiling, reduce the heat.
9. Cook the broccoli in the pot for 2 minutes.
10. In 2 minutes, turn off the heat.
11. Take the broccoli out from the pot.
12. Add tomatoes into the pot.
13. Add condensed tomato soup.
14. Turn on the heat. Bring the pot to boil.
15. Once the pot is boiling, reduce heat.
16. Let it cook for 3-4 minutes.
17. In 3-4 minutes, turn off the heat.
18. The noodle soup is cooked.
B. Cook noodles.
1. Add 2 litres of water into another pot. (noodle pot)
2. Heat the noodle pot and bring it to boil.
3. Add ½ tsp of salt into the noodle pot.
4. Once the noodle pot is boiling, add noodles.
5. Stir the noodles.
6. When the pot is boiling again, keep the lid open.
7. Keep it boiling for 4 minutes as I am using fresh noodles. Boil for 10 minutes if you are using dried noodles.
8. In 4 minutes, turn off the heat.
C. Serve
1. Transfer the noodles into a big bowl.
2. Add corns and broccoli on top the noodles.
3. Scoop the noodle soup from Procedure A on top of the noodles.
4. All steps may be completed in less than 40 minutes.
5. Enjoy.
