Oyster Mushroom Soy Bean Soup
300g Oyster mushrooms
1/3 cup Soy beans
1 or 2 slice Ginger
2 Litre Water
¼ tsp cooking oil
2 tsp salt
1. Soak soy beans to get the best taste feeling.
2. Use wok or deep pan to treat oyster mushrooms before put them into the soup.
3. If use high pressure cooker, add salt before close the lid.
4. If use normal pot to cook on the cooktop. Keep the soup boiling at any time.
1. Soak soy beans overnight. (this step is optional for a better taste)
2. Wash soy beans.
3. Wash oyster mushrooms. Tear them into smaller strips as you wash.
4. Cut 1 or 2 slices of ginger.
5. Heat a wok or a deep pan.
6. Add oil into the wok.
7. Wait until oil is hot. Add oyster mushrooms.
8. Stir mushrooms in the wok for at least 1 minute.
9. Add treated oyster mushrooms into the inner pot of high pressure cooker.
10. Add soy beans into the pot.
11. Add ginger slices.
12. Fill the pot with 2 litre of water.
13. Add 2 tea spoons of salt.
14. Cook for 30 minutes in the high pressure cooker. Cook for 1 hour in normal soup pot on the cooktop.
15. After high pressure cooker is power off. Let it sit for 10 minutes before release steam from high pressure cooker.
16. Open lid. Soup is done.
17. Enjoy.
