Salt Pepper Battered Chickpea Kale Burger

Materials: 3 Burgers

½ cup Chickpeas
1 Kale to dice to 1 cup
½ cup glutinous rice flour
Bread Buns
Salt Pepper Batter:
1/3 cup plain flour, 1 tsp salt, ½ tsp black pepper, 3 ½ tbsp water

Ingredients:

Salt 1 tsp
Oil 1 tsp oil for patties mix and 1 tbsp to cook the patties
Sugar 1 tsp
Black Pepper sprinkle
Rosemary Leaves ½ tsp
Water 2 tsp

Tips:

1. Soak chickpeas overnight.

2. Take sauces and veggies out from fridge early enough for better taste feeling.

3. Dice kale to fine.

4. Ideal chickpea granule size to be 2-3mm long x 1mm wide.

5. Use food processor safely. Lock all components before process. Take container out and use long spoon to check the food inside the container. Pull spindle out with blades. Do not touch sharp blades with hands directly.

6. Use large bowl to make patties. Make patties with gentle force.

7. Add water gradually when making the batter.

8. Make patties into a ball first, then press down.

9. You may brush batter to the patties.

10. Cooking patties is easy when we use flat pan and curved spatula.

11. When oil is warm in the pan, turn off the heat. Do this when putting in patties may also protect you from being burned.

12. Carefully control cooktop heat to cook patties so both sides are in crispy golden brown and the patties are cooked.

13. Add salt only to meshed avocado. Cover the avocado mesh container. Do not leave the mesh container expose to the air for too long.

14. Use wavy edge knife to cut buns and tomatoes.

15. Warm buns to get best taste result.

16. Not recommend to add salt and pepper in addition to the battered patties.

17. Any types of cheese seem not necessary for this recipe.

Procedure:

1. Soak chickpeas overnight.
2. Drain and wash chickpeas.
3. Wash kale, cucumber, tomato and avocado.
4. Dice the kale to fine.
5. Slice tomato and cucumber.
6. Grind chickpeas into granules. Granule size to be around 2-3mm long x 1mm wide.
7. Mix grinded chickpeas, diced kale, salt, sugar, black pepper, rosemary leaves, oil and glutinous rice flour together. Add half of the glutinous rice flour first. Then add the rest.
8. Add water. Around 2 tea spoons of water is added.
9. Mix them into dough. Then separate them into 3 equal parts.
10. Make batter with 1/3 cup of plain flour, 1 tea spoon of salt, ½ tea spoon of black pepper and 3 ½ table spoon of water. Add water gradually.
11. Heat a flat pan. Add oil. ½ table spoon of oil for the start. Turn off the heat when oil is warm.
12. Make patties from the mixture. Then coat batter on to the patties.
13. Cook patties in the flat pan.
14. Control heat well to cook the patties and make both sides of the patties in golden brown.
15. Mesh avocado. Add salt only.
16. Spread avocado mesh or apple sauce on the bread. Make burgers with bread buns, cucumber, tomato, cooked patties and alfalfa sprouts. Use BBQ sauce for dressing.
17. Enjoy.
