Salt Pepper Battered Tofu Green Bean Burger

Materials: 4 Burgers

4 pieces firm tofu (from 900g firm tofu package, 1 package total 12pcs. 4 pcs makes 4 patties)
12-15 green beans (100g)
½ cup plain flour
¼ cup glutinous rice flour
Bread Buns
Salt Pepper Batter:
1/3 cup plain flour, 1 tsp salt, ½ tsp black pepper, 3½ tbsp water

Ingredients:

Salt 1 tsp
Oil ½ tsp oil for patties mix and 1 tsp to cook the patties
Sugar ½ tsp
Black Pepper sprinkle
Water 1 tsp

Tips:

1. Use gentle water to wash any type of Tofu including firm tofu.

2. Dry cos lettuce with paper towel.

3. No need to tear tendons off the green beans. Just cut both end off. Then dice.

4. Use large bowl to make patties. Make patties with gentle force.

5. Add water gradually when making the batter.

6. Make patties into a ball first, then press down.

7. If the dough is too solid, add water to adjust.

8. You may brush batter to the patties.

9. Cooking patties is easy when we use flat pan and curved spatula.

10. When oil is warm in the pan, turn off the heat. Do this when putting in patties may also protect you from being burned.

11. Carefully control cooktop heat to cook patties so both sides are in crispy golden brown.

12. Use wavy edge knife to cut buns.

13. Warm buns to get best taste result.

14. For better taste feeling, use sauce and vegetables same as this recipe.

15. Not recommend to add salt and pepper in addition to the battered patties.

16. Any types of cheese seem not necessary for this recipe.

Procedure:

1. Wash the firm tofu with gentle water.
2. Wash green beans and cos lettuce.
3. Dry cos lettuce with paper towel.
4. Dice the green beans.
5. Mix tofu, diced green beans, salt, sugar, black pepper and oil together. Add plain flour and glutinous rice flour to mix.
6. Add water if the dough is too solid. Around 1 tea spoon of water is added.
7. Mix them into dough. Then separate them into 4 equal parts.
8. Make batter with 1/3 cup of plain flour, 1 tea spoon of salt, ½ tea spoon of black pepper and 3 ½ table spoon of water. Add water gradually.
9. Heat a flat pan. Add oil. ½ tea spoon of oil for the start. Turn off the heat when oil is warm.
10. Make patties from the mixture. Then coat batter on to the patties.
11. Cook patties in the flat pan.
12. Control heat well to cook the patties and make both sides of the patties in golden brown.
13. Spread apple sauce on the bread. Make burgers with bread buns, cos lettuce and cooked patties. Use BBQ sauce for dressing.
14. Enjoy.
