Tomato Hairy Melon Mung Bean Thread Soup
4 tomato (600g)
1 hairy melon (1 kg)
1 bundle mung bean thread (50g)
2 litre Water
¼ tsp oil
2 tsp salt
1. Use hot water to soak mung bean threads.
2. Peel melon skin off and take its seeds out.
3. Stir tomatoes in the soup pot with a little bit of oil before adding water.
4. Cut mung bean thread into half.
5. Only add mung bean thread towards the end of cooking.
6. Use chopsticks to take mung bean threads out from soup.
1. Boil a litre of hot water.
2. Use the hot water to soak mung bean thread in a bowl.
3. Wash tomatoes and hairy melon.
4. Cut tomatoes into chunks.
5. Peel off hairy melon’s skin and take its seeds out.
6. Cut the melon into chunks.
7. Heat a pot.
8. Add ¼ tsp oil into the pot.
9. When oil is hot, add tomatoes.
10. Stir tomatoes to moderate tender.
11. Add 2 litres of water into the pot.
12. Bring the tomato water to boil.
13. When the tomato water is boiling, add hairy melon.
14. Add 2 tea spoons of salt as well.
15. Bring the soup to boil again.
16. Reduce heat. Still keep the soup boiling, but not massively.
17. Cook for 20 minutes.
18. Cut mung bean threads into half with scissor.
19. In 20 minutes, add mung bean thread into the soup.
20. Bring the soup to boil again.
21. Once the soup is boiling after adding mung bean thread, turn off the heat.
22. Transfer soup into bowl, use chopsticks to take mung bean threads out.
23. Enjoy.
