Tempeh is undeniably one of the great choices due to its valuable source of protein and essential nutrients. In the fermentation process of tempeh, it can elevate the levels of isoflavones while reducing its starch and fat content. Fermented soybean products have been linked to anti-diabetic effects attributed to the presence of various compounds including phytoestrogen, bioactive soy peptides, and isoflavonoids.
